French Fried Onion Flowers

Ingredients

  • 6 sweet onios, (such as Oso Sweet or Vidalia...about 1/2 pound each
  • 1/2 Cup all purpose flour
  • 2 Tablespoons dried Thyme, divided
  • 1 1/2 teaspoon salt, divided
  • 1 teaspoon pepper, divided
  • 5 eggs
  • 2 cups saltine cracker crumbs (about 40 crackers)
  • Vegatable oil
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 1 1/2 teaspoon grated horseradish
  • 1 teaspoon grated lemon zest
  • additional grated lemon zest, optional

Using sharp knife trim stem ends of onions to level. Peel onions, leaving root ends intact. Carefully slice onions crosswise into 12 equal sections, leaving root ends intact.
Step 2
Over high heat bring large pot of water to a boil. Add onions; cook 1 minute Transfer to bowl of ice water. Refrigerate 1 hour to open onion "petals" Drain cut-side down on rack.
Step 3
Combine flour, 1 Tablespoon Thyme, 1 teaspoon salt and 3/4 pepper in plastic food storage bag. place onion in bag: shake to coat. repet with remaining onions. In bowl beat eggs. Dip onions into eggs, turning to coat thoroughly. Combine cracker crumbs with remaining Thyme. Place onion in crumbs; sprinkle crumbs over top to coat.
Step 4
In deep-fat fryer or large pot heat 5" of oil over high heat to 350 degrees F. Fry onions, one at a time, until crisp and golden, about 6 minutes. Drain on paper towels. For dip, combine sour cream, mayonnaise, horsedish, zest and remaining salt and pepper. Garnish with lemon zest, if desired.
