Roasted Tomato & Basil Soup

Ingredients

  • 3 lbs tomatoes, halved
  • 1 onion, peeled and quartered
  • 4 garlic cloves
  • 2 tablespoons olive oil
  • 1 cup chicken broth
  • 1/3 cup fresh basil leaves
  • 1 tablespoon lemon juice
  • 1/2 tsp salt
  • Fresh Basil Sprigs

Preparation

Step 1

Drizzle olive oil over the tomatoes, onion and garlic on a roasting pan. Roast at 400 for 30-45 minutes. Skin tomatoes. Transfer to a large soup pot. Add broth and basil. Bring to a boil; reduce heat, and simmer uncovered for 15 minutes. Cool. Process in a blender or food processor until smooth. Strain. Add lemon juice and salt. Serve warm or chilled. Garnish with fresh basil sprigs.
