Lucretia's Sweet Potato Pie

This recipe was handed down to me from my Aunt Lucretia who preferred sweet potatoes to pumpkin. If you like pumpkin pie, you will love this sweet potatoe pie!
Ingredients
- 4 to 5 medium sized sweet potatoes (yams)
- 3/4 cup of sugar
- 3/4 cup of brown sugar
- 2/3 cup of evaporated milk
- 1 stick of butter (softened)
- 6 eggs
- 2 table spoons of cinnamon
- 1 teaspoon of nutmeg
- 1/2 teaspoon of salt
- 1 teaspoon of vanilla extract
- 2 deep dish pet ritz pie crusts (or your own pie crust recipe)
Preparation
Step 1
Preheat oven to 350 degrees Fahrenheit.
Place potatoes in a pot of water and bring to a boil. Continue boiling until potatoes soften--about 40 minutes. Remove potatoes and place under cool running water. Once potatoes have cooled, peal the skins off easily by hand and place the potato flesh in a mixing bowl. Add the evaporated milk, butter, sugars, eggs, cinnamon, nutmeg, salt, and vanilla extract and mix with a hand mixer until the batter is smooth with almost no lumps. Pour the batter into 2 deep pie crust shells. Place the pies onto the center rack in the oven and bake for 55 minutes. Use a fork or toothpick to poke the center of the pie. If the fork or toothpick comes out clean the pie is done! Remove pies from the oven and let cool and enjoy!
