Scones Honey Apple

dark chocolate cherry scones variation; follow recipe but leave out cinnamon and apple; add 1 teaspoon of vanilla in step 3, in step 5 add 5 ounces dark chocolate, cut into bite-size chunks and 1/4 cup dried cherries

Ingredients

  • 3 cups blanched almond flour
  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoon fine sea salt
  • 4 tablespoons butter, cut into small pieces (freeze butter to make it cold as possible)
  • 1 teaspoon ground cinnamon
  • 2 large eggs
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons honey
  • 1 small granny smith or fuji apple, peeled, cored and cut into thin tiles

Preparation

Step 1

1. Preheat oven to 350 degrees; line a baking sheet with parchment paper.
2. In a large bowl, combine flour, baking soda and salt. Use hands or pastry cutter to work the pieces of butter into the dry ingredients until a crumbly mixture is produced. Then, mix the cinnamon into the flour mixture.
3. In separate bowl, whisk together eggs, apple cider vinegar and honey.
4. Make a well in the middle of the dry ingredients and pour the egg mixture into it.
5. Gently mix until a wet chunky dough forms and add apples. Combine and form into a ball.
6. Flatten dough 3/4 inch thick and cut into 6 - 8 equal sized wedges and put on parchment-lined baking sheet.
7. Bake for 20 to 25 minutes, rotate the trays halfway through.
