Carrot Muffins

Ingredients

  • 2 C flour
  • 1 t baking soda
  • 1 t cinnamon
  • 1/2 t salt
  • 1/8 t ground cloves
  • 1/2 C chopped walnuts
  • 1 egg
  • 1/2 C sugar
  • 1/4 C veg. oil
  • 1/2 t vanilla
  • 1 C applesauce (unsweetened)
  • 1 C grated carrots
  • 1/4 C golden raisins
  • Cream Cheese Spread
  • 1 pkg cream cheese
  • 1/4 C butter
  • 1/2 t vanilla
  • 1/2 C 10x

Preparation

Step 1

Heat oven to 375. Mix flour, soda, cinnamon, salt, cloves & nuts. Beat eggs & sugar in a bowl. Add oil, vanilla & applesauce.
Make well in center of flour mix. Add egg mix to well. Stir into flour mix til moist & batter comes together. Fold in carrots & raisins.
Bake @ 375 for 20 mins. Let cool. Serve warm w/ spread (mix spread ingred well)
