Gorgonzola Stuffed Beef Tenderloin

  • Serves 4
  • 4 beef tenderloins, 8 ounces each
  • 1 1/2 cups gorgonzola crumbles
  • 1 Tbs minced garlic
  • 1 tsp cracked black pepper
  • Salt and pepper, to taste
  • 2 ounces olive oil

Preparation

Step 1

Mix gorgonzola, garlic, and black pepper together. Cut a 1/2 to 3/4 inch slit in side of filet and stuff with cheese mixture. Salt. And pepper the steaks. Preheat a saute pan with olive oil at medium high heat. Place steks in a pan allowing a golden sear on both sides and finish in the oven at 375 degrees. Cook through to desired doneness and let rest 3 to 4 minutes.
