Ingredients
- 1 (16 oz.) box pasta of your choice
- 1/2 cup olive oil
- 3 large cloves garlic, minced
- 2 pints cherry or grape tomatoes, or a combination
- 1 Tbsp. balsamic vinegar
- 1/2 cup chopped fresh basil
- 4 oz. fresh mozzarella cheese, cubed
Preparation
Step 1
Heat a large pot of water to a boil, then add 1 tablespoon salt. Cook pasta according to package directions.
Meanwhile, in a deep skillet, heat the olive oil over medium-low heat. Add the tomatoes and garlic and cook, stirring occasionally, until tomatoes burst. Be careful that the garlic does not brown.
When the tomatoes have burst and the pasta is cooked and drained, add the balsamic vinegar, basil and cheese and stir until combined. Pour it into a large bowl and add the pasta. Toss until the cheese is melted throughout.
Serve with Parmesan cheese, if desired.
