Velveeta Microwavable Creamy Broccoli Soup

Makes five 1 cup servings. Any of the Velveeta types of cheese can be used plus you can add any other frozen or cooked leftover diced vegetables.

Ingredients

  • 1/4 cup chopped onion
  • 1 Tablespoon butter
  • 2 cups milk (Carnation canned milk can also be used)
  • 1 8oz. pkg. Philadelphia Brand Cream Cheese, cubed
  • 3/4 lb. Velveeta cubed
  • 1 10oz. frozen chopped broccoli, cooked, drained
  • 1/4 teaspoon ground nutmeg
  • dash of pepper

Preparation

Step 1

Microwave onions and butter in 2 quart microwave-safe bowl on High (100%) power for 30 seconds or until onions are tender. Add milk; microwave on High 4 minutes, stirring after2 minutes. Stir in cream cheese; microwave 4-6 minutes or until cream cheese is melted, stirring every 2 minutes. Add Velveeta and microwave till cheese is melted, about 2-3 minutes, stirring after 1 1/2 minutes. Don't over cook. Stir in remaining ingredients; microwave on high 30 seconds or until thoroughly heated.
