Kale Salad with Lemon Vinaigrette

Ingredients

  • 3 tbsp meyer lemon juice
  • 1/2 tsp ground cumin
  • 1/2 tsp sea salt
  • 3-4 grinds pepper
  • 2 tsp olive oil
  • 4 cups kale cut in small pieces
  • 1/2 cup sweet onion cut in thin crescents
  • 1/4 cup pomegrantes or cranberries
  • 3 tbsp of raw pumpkin seeds

Preparation

Step 1

In large bowl add first 4 ingredients. When salt dissolves mix in oil. Roast pumpkin seeds in dry pan til brown. Add kale and remaining ingredients to bowl. Add pumkin seeds to salad. Serves 4
