Ingredients
- 1/4 cup extra virgin olive oil (I only used 2 tbsp.)
- 1 onion, finely chopped
- 3 cloves, minced (I used powder)
- 1 head of cauliflower, chopped
- 1 cup chicken and/or vegetable broth
- 2 tsp dried rosemary
- Salt and pepper to taste
Preparation
Step 1
Heat a deep pot over medium heat with oil. Add onions and cook till soft then add garlic, cauliflower, broth, rosemary, salt and pepper.
Cover pan and cook until soft. Do not drain.
Mash the cauliflower with a potato masher and add Parmesan cheese (opt).
