Chickpea, Tomato & Cilantro Salad

Ingredients

  • 5 C cooked chickpeas
  • 2 finely chopped tomatoes
  • 1 C diced red pepper
  • 1 diced jalapeño pepper
  • 1/2 C diced red onion
  • 1 1/2 T sherry vinegar
  • Juice of a lemon, @ 1/4 C
  • 8 T olive oil
  • 3 T chopped cilantro
  • Salt & pepper

Preparation

Step 1

In bowl, combine chickpeas, tomatoes, bell pepper, onion & jalapeño.
In another small bowl combine sherry vinegar, lemon juice & olive oil. Season with salt & pepper, whisking until smooth.
Combine chickpea mixture & dressing, tossing gently. Add cilantro & correct seasonings to taste.
Cover & chill 2-4 hrs.
