Ingredients
- 1 1/2 pounds Kirby cucumbers
- salt and black pepper to taste
- 3 cloves very thinly-sliced garlic
- 1 teaspoon red pepper flakes
- 1/2 teaspoon dried thyme
- 2 Tablespoons white wine vinegar
- 1 Tablespoon snipped fresh dill sprigs
- juice of 1 lime
Preparation
Step 1
Peel the cucumbers and cut into spears. Place the cucumbers in a non-reactive / glass bowl, then apply salt and black pepper generously. Add the garlic, red pepper flakes, thyme, and white wine vinegar. Marinate at least one hour in frig, longer is much better. Before serving, add the dill and lime juice. Keeps several days in the frig if well-covered.
