Red Pepper Israeli Couscous

Ingredients

  • 3/4 cup red pepper; chopped
  • 1/2 cup red onion; chopped
  • 4 teaspoon olive oil
  • 3/4 cup israeli couscous
  • 1-1/4 cup Water
  • 1/4 teaspoon Salt
  • 1/4 teaspoon black pepper
  • 3 tablespoon fresh lime juice
  • 2 tablespoon fresh cilantro; chopped
  • 1 jalapeno peppers; seeded and finely chopped

Preparation

Step 1

Saute bell pepper and onion in oil three minutes. Add couscous, water, salt
and black pepper; bring to a boil. Reduce heat to medium low, cover and
simmer eight minutes. Stir in juice, cilantro, and jalapeno.
