Ingredients
- 1 Medium Zucchini, chopped.
- 1 thick slice of onion, chopped.
- 1 can of black beans, drained and rinsed.
- 2 TBSP Salsa
- Salt and Pepper to taste.
- 1 tsp chili powder
- 1/2 tsp cumin
- 1/2 tsp curry powder OR smoked paprika
Preparation
Step 1
Spray a skillet with no-stick spray. Sautee the onions on med-high heat until they start to lose their water. Add the zucchini and cook for a few minutes more. Add the beans and salsa. Sprinkle with the spices. Heat until warmed throughout.
