Ingredients
- 2 ruby red grapefruit
- 4 thin cutlets..6oz each
- salt and pepper
- 1/2 c flour
- 3 eggs
- 1 t lemon juice
- 2 t evoo
- 1/4 c chicken stock
- 1/2 c white wine
- 2 t butter
- 2 t fresh tarragon
- 2 t fresh chives
Preparation
Step 1
1)cut skin and pith from grapefruit and cut into segments
2) season chicken with salt and pepper. place flour on plate. in shallow bowl whisk eggs and lemon juice
3) in large skillet heat oil, dredge chicken in flour then coat in egg mix. cook til golden and chicken is cooked through. about 3 min per side. transfer to plate
4) pour stock into skillet; cook stirring for 2 minutes. add wine and stir up brown bits for 1 minute. melt butter into sauce, stir in tarragon, chives and grapefruit segments. pour sauce over chicken
