Ingredients
- 1 well trimmed whole beef tenderloin- 4-5 lbs
- Olive oil
- 2 tsp. cracked mixed peppercorns
- 4 cloves garlic minced
- 2 tsp. dried basil leaves, crushed
- 2 tsp. dried oregano leaves, crushed
- 2 tsp. steak and chop rub
Preparation
Step 1
Pat tenderloin dry and rub with olive oil. Combine all seasonings and rub over tenderloin. Wrap in plastic wrap and chill overnight.
Unwrap tenderloin and place on baking sheet. Insert meat thermometer into the thickest part of the meat and bake at 425 degrees until thermometer registers 135 degrees for medium rare.
Tent tenderloin and let rest for 10 minutes. Slice and serve.
