Cheesy Bacon Rotel Cups

Ingredients

  • 3 (1.9 oz.) boxes frozen Mini Phyllo shells - 15 per box
  • 1 cup mayonnaise
  • 1 (10 oz.) can Rotel tomatoes (drained)
  • 1/2 cup chopped, cooked bacon
  • OR 1 (2.8 oz.) pkg. Oscar Mayer Real Bacon Bits
  • 1 1/2 cups shredded Colby and Monterey Jack Cheese

Preparation

Step 1

Preheat oven to 350. Remove Phyllo shells carefully from boxes. (No need to thaw). Place shells on baking sheet.

In a large bowl, mix mayonnaise, tomatoes, and bacon bits. Stir to combine. Stir in cheese. Scoop 2 Tbsp. of filling into each shell. Bake 15-20 minutes or until golden.
