German Potato Salad

Ingredients

  • 1/2 lb bacon
  • 1 medium onion
  • 1/2 C celery
  • 1 1/2 C water
  • 1/4 C flour plus 1 T
  • 2 tsp salt
  • 1 C sugar
  • 1/2 C vinegar
  • 3 lb red salad potatoes
  • 3 eggs hard boiled (if desired)

Preparation

Step 1

Cook and peel red potatoes.
Fry bacon crisp then cup up (save drippings)
Mix drained bacon in with potatoes
Use 1/2 C of bacon drippings or what is left after frying bacon
Stir into drippings, flour and then sugar, salt, add water, vinegar, celery and onion
Bring to a boil for 5 minutes
Pour over potatoes and stir
Cut up hard boiled eggs on top if desired
Serve warm
