Summer Squash and Shrimp Pasta

Ingredients

  • 8 Large shelled and deveined shrimp
  • grape tomatoes
  • yellow zucchini
  • Whole wheat spaghetti
  • garlic clove
  • basil
  • olive oil

Preparation

Step 1

Thread 8 shrimp, 1/2 c grape tomatoes and 1 medium yellow zuccini, cubed, on 6 skewers. Spray skewers with nonstick spray: broil or pan-grill until shrimp is opaque and veggies are lightly charred, 6-8 minutes. Remove shrimp and veggies from skewers;m toss with 1 c cooked whole-wheat spaghetti, 1 minced garlic clove, 2 tbsp sliced basil, 1 tsp olive oil and 1/4 c pasta cooking liquid; sprinkle with 1 tsp grated Parmesan and a pinch red pepper flakes. Serve with 2 c watermelon cubes.
