Spicy Red Potatoes

  • 2 pounds red potatoes
  • 1 tbsp. minced garlic
  • 1/4 cup olive oil
  • 1 tsp. red pepper flakes
  • 1 tsp. kosher salt

Preparation

Step 1

1. Preheat oven to 400.
2. Combine garlic, olive oil, pepper flakes, and salt in a large bowl. Add potatoes and toss to coat. Spread potatoes in a single layer on a large baking sheet.
3. Cover with foil and roast for 15 minutes. Remove foil and roast for another 30 minutes or until soft. Stirring once or twice.
