PIZZA PASTA SALAD

Ingredients

  • 1 pound tri colored vegtable twist pasta
  • 3 med. tomatoes, seeded and diced or i use grape tomatoes,they are much sweeter.
  • 1 package (8 ounces ) Cheddar cheese, cube
  • 1 package (8 ounces) mozzarella cheese, cube
  • 6 scallions, thinly slice
  • 1 package (3 ounces) sliced pepperoni
  • 3/4 cup vegetable oil
  • 1/2 cup red wine vinegar
  • 1/3 cup grated Parmesan cheese
  • 2 tsp. dried oregano
  • 1 tsp. garlic powder
  • 1 tsp salt
  • 1/4 tsp. pepper

Preparation

Step 1

1. Prepare the pasta according to the package directions; drain, rinse, and drain again. Place
in a large bowl and allow to cool.
2. Add the tomatoes, Cheddar and mozzarella cheeses, scallions, and pepperoni to the pasta;
toss until well combined.
3. In a medium bowl combine the oil, vinegar, Parmesan cheese, oregano, garlic powder,
salt, and pepper; mix well. Pour the dressing mixture over the pasta mixture and toss until
evenly coated.
4. Cover and chill for at least 2 hours before serving.
