Ingredients
- 2 lbs. (1kg.) red skinned potatoes, washed and dried, unpeeled
- 1/2 c. (125ml.) milk, hot
- 2 tbsp. (25ml.) butter chopped
- 2 tbsp. (25ml.) olive oil
- 1 tsp. (5ml.) salt or more to taste
- 1/4 tsp. (1ml.) black pepper, freshly ground
- 2 tbsp. (25ml.) chopped fresh parlsey
Preparation
Step 1
Roast potatoes in a 400F oven, directly on the racks, for about 60 - 90 minutes or until tender inside and a little crispy outside. Cut into quarters and place in a large bowl.
Roughly crush potatoes with a large potato masher. Add milk, butter, oil, salt, pepper and parsley
