Potato Gnocchi

Ingredients

  • 4 potatoes ( about 1 pound) peeled and boiled
  • 3/4 cup sifted flour
  • 1 1/2 teaspoon salt
  • 1 egg
  • 1 egg yolk

Preparation

Step 1


Force potatoes through ricer or mash until completely smooth. Add the flour, salt egg and egg yolk mixing until thoroughly blended. Shape into small sausages. (2” long). Drop into boiling salted water. Cook until they float—about 8 minutes. Drain.

Serve with spaghetti sauce and grated parmesan cheese.
