Ingredients
- 1 ounce orzo pasta, dry
- 1 teaspoon lemon juice
- 1 teaspoon red wine vinegar
- 1/8 teaspoon black pepper
- 1/4 teaspoon oregano, dried
- 3/4 teaspoon olive oil, extra virgin
- 2 tablespoons green onion, chopped
- 6 tomatoes, cherry
- 1/3 cucumber
- 3 ounces shrimp (US or Canada), cooked
- 5 olives, black
- 1 ounce feta cheese, low-fat
Preparation
Step 1
Cook orzo according to package directions; drain and set aside.
In a medium bowl, whisk together the lemon juice, vinegar, pepper, oregano and oil.
Chop onion; halve tomatoes; and peel and dice cucumber.
Toss all ingredients together. Serve warm or at room temperature.
