Spinach, Feta & Sun-dried Tomato Omelet

Ingredients

  • 2 lg eggs
  • Salt & Pepper
  • Butter
  • 1/2 c chopped spinach
  • 2 T chopped oil-packed sun-dried tomatoes
  • 2 T crumbled Feta

Preparation

Step 1

1. Beat lg eggs w/salt & pepper.
2. Cook in butter in a med nonstick skillet over med heat, stirring & tilting the pan, until just set, 2-3 min. Sprinkle w/spinach, tomatoes, & Feta cheese; fold over filling. Serve w/bread.
