Pineapple Coconut Squares

Ingredients

  • 2 T butter, melted
  • 3 T sugar
  • 1 egg
  • 1 c all purpose flour
  • 1 t baking powder
  • 2 cans (8oz ea)unsweetened crushed pineapple, drained
  • Topping
  • 1 T butter, melted
  • 1 c sugar
  • 2 eggs
  • 2 c flaked coconut

Preparation

Step 1

In a mixing bowl, beat the butter and sugar. Beat in the egg. Combine flour and baking powder; stir into egg mixture. Prss into a 9 in square baking dish coated with cooking spray. Spread pineapple over the crust and set aside.

For topping, in a mixing bowl, beat the butter and sugar. Beat in eggs. Stir in coconut. Spread over pineapple. Bake at 325 for 35-40 min or until golden brown. Cool before slicing.
