New Potato Corn and Chickpea Salad

Ingredients

  • Dressing:
  • 2 lbs baby new potato halved
  • 1-17 oz can whole kernel corn drained
  • chick peas or 1/2 if a 19 0z cab white navy beans rinsed and drained
  • 4 green onions chopped
  • 4 tsp fresh chopped chives
  • 1/3 cup olive oil
  • 3 tbsp lemon juice
  • 1/2 cup mayo
  • 1/2 cup sour cream
  • 1 tsp sugar
  • 4 tsp dijon mustard

Preparation

Step 1

Combine dressing ingredients and set aside. Boil potatoes until tender. Drain and cool. Combine potatoes with remaining ingredients in bowl. Add dressing and mix well.
