Strawberry Cream Pie

Ingredients

  • 1 c. sugar
  • 6 Tb cornstarch
  • 2 1/2 c whole milk, scalded
  • 2 eggs, slightly beaten
  • 3 Tb butter
  • 1/2 tsp vanilla
  • 1 9-inch pastry pie shell, baked
  • 2 c. strawberries, washed and hulled
  • 1 c. heavy cream, whipped (or cool whip)

Preparation

Step 1

In top of double broiler mix sugar and cornstarch. gradually add milk and cook over simmering water, stirring constantly, until thickened. Add a small amount of hot mixture to the beaten eggs, whisk quickly.

Return egg mixture to hot sauce in double broiler. cook, stirring constantly, until thick. Remove from heat; add butter and vanilla. Cover and chill.

Pour chilled mixture into pie crust, arrange halved strawberries over filling. Chill. Spread with whip cream before serving.
