Coconut Shortbread

Ingredients

  • 4 c. flaked coconut
  • 2 c. flour
  • 1 c. butter, softened
  • 1 1/2 tsp vanilla
  • 1 c. chocolate chips (optional)

Preparation

Step 1

Preheat oven to 350.

Beat everything but chocolate chips, until dry ingredients are moistened. Press dough evenly inot 2 lightly greased 9 inch tart or cake pans.

Bake for 25 mins. Let stand 5 mins. Cut each shortbread into 12 wedges. Place wedges on large ungreased sheet. Bake 5 more mins or until crisp. Remove to wire rack. Trim coconut from edges.

Melt chocolate chips and drizzle over cookies if you want
