Ingredients
- Filling:
- 9 graham crackers
- 6 Tbs butter
- 8 oz cream cheese, room temperature
- 1/3 cup sugar
- 1 egg
- 3 Tbs sour cream
- 2 Tbs lemon juice
- 2 tsp. grated lemon peel
- 1 tsp. vanilla extract
- fresh berries
Preparation
Step 1
To make crust:
Preheat oven to 350.
Fold 16 inch long piece of foil to 8x16 strip. Place in 8x8x2 metal baking pan leaving overhang on 2 sides. Repeat with another foil strip in opposite direction lining pan completely. Butter the foil.
Place graham crackers in plastic bag and crush with mallet or rolling pin. Melt butter in medium skillet over low heat. Add crumbs and toss to coat. Press crumbs into pan. Bake until golden, about 12 minutes. Cool.
Filling
Using electric mixer beat cream cheese and sugar in large bowl until smooth. Beat in egg and sour cream, then lemon juice, peel and vanilla. Spread over crust.
Bake cheesecake until slightly puffed and set in center, about 30 minutes. Cool completely then chill at least 2 hours until cold.
