Zucchini Chocolate Chip Cake

Ingredients

  • 1 3/4 C sugar
  • 1/2 C canola oil
  • 2 eggs
  • 2/3 C unsweetened applesauce
  • 1 tsp vanilla
  • 2 1/2 C flour
  • 1/2 C baking cocoa
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 C 1% buttermilk
  • 2 C shredded zucchini
  • 1 C (6oz) mini chocolate chips
  • 1/2 C toasted chopped pecans

Preparation

Step 1

- Beat sugar and oil at medium speed for 1 min.; add eggs, applesauce and vanilla and beat 1 more minute
- Combine flour, cocoa, baking soda, salt; add to sugar mixture alternately with buttermilk - beating until just blended; stir in zucchini
- Pour into 13 X 9 sprayed pan; bake at 350 for 20 min; sprinkle with chocolate chips and pecans and bake 10 - 20 min. longer until toothpick comes out clean
