Zucchini Chips

Ingredients

  • 1/2 cup Italian seasoned breadcrumbs
  • 1/8 t salt
  • 1/8 t pepper
  • 1 large zucchini, cut in 1/4 inch slices
  • 3 large egg whites, lightly beaten
  • Cooking spray

Preparation

Step 1

1. Preheat oven to 475
2. Place breadcrumbs in a shallow dish. Sprinkle salt and pepper evenly on zucchini slices
3. Dip zucchini slices into egg whites, and dredge in breadcrumbs, pressing firmly to coat. Place zucchini slices on a baking sheet coated with cooking spray. Bake at 475 for 10 minutes or until browned. Serve immediately.
