Ingredients
- Spice Blend:
- 1 c EVOO
- 1/2 c lemon juice
- 6 cloves garlic, minced
- 1 tsp salt
- 1 tsp dried thyme
- 1/2 tsp pepper
- 1/4 tsp ground allspice
- 1/4 tsp ground nutmeg
- 8 boneless, skinless chicken breast halves
- 3 medium lemons, thinly sliced
- 2 tsp paprika
- 1/2 tsp garlic salt
- 1/2 tsp lemon-pepper seasoning
- 1/4 tsp ground allspice
- 1/8 tsp ground cinnamon
Preparation
Step 1
In a small bowl, whisk together the first 8 ingredients until blended. Pour 1 c marinade into a large resealable bag. Add chicken; seal and turn to coat. Refrigerate 1 hr. Cover and refrigerate remaining marinade.
Preheat oven to 350 degrees. Arrange lemon slices in the bottom of a greased baking dish. Drain chicken, discarding marinade in bag. Place chicken over lemon slices. Mix spice blend ingredients; sprinkle over chicken. Drizzle with remaining marinade. Bake chicken, covered, 35-40 mins or until it's cooked through.
