Ingredients
- 2 tbsp champagne vinegar
- 2 tsp lemon juice
- 1 tsp dijon mustard
- 1 shallot, finely chopped
- 1/2 c olive oil
- 4 c torn leaf lettuce
- 4 c fresh spinach
- 2 c fresh arugula
- 3/4 c chopped walnuts, toasted
- 1/2 c pomegranate seeds
Preparation
Step 1
IN a small bowl, whisk champagne vinegar, lemon juice, dijon mustard and shallot. Gradually whisk in the olive oil.
In a large bowl, combine lettuce, spinach and arugula. Pour vinaigrette over salad; toss to coat.
Sprinkle salad with toasted walnuts and pomegranate seeds. Serve immediately.
