Mixed Greens w/ Lemon Champagne Vinaigrette

Ingredients

  • 2 tbsp champagne vinegar
  • 2 tsp lemon juice
  • 1 tsp dijon mustard
  • 1 shallot, finely chopped
  • 1/2 c olive oil
  • 4 c torn leaf lettuce
  • 4 c fresh spinach
  • 2 c fresh arugula
  • 3/4 c chopped walnuts, toasted
  • 1/2 c pomegranate seeds

Preparation

Step 1

IN a small bowl, whisk champagne vinegar, lemon juice, dijon mustard and shallot. Gradually whisk in the olive oil.

In a large bowl, combine lettuce, spinach and arugula. Pour vinaigrette over salad; toss to coat.

Sprinkle salad with toasted walnuts and pomegranate seeds. Serve immediately.
