Zucchini Mushroom Kugel

Ingredients

  • 5 large zucchini, unpeeled and thinly sliced
  • 2 large boxes mushrooms, peeled and thinly sliced
  • 1 large onion
  • 3 tbsp. olive oil
  • 1/4 cup mayo
  • 1/2 cup matzoh meal
  • 2 eggs
  • 1 1/4 tsp. onion powder
  • 1 tsp. salt
  • 1/8 tsp. pepper
  • cornflake crumbs

Preparation

Step 1

1. Saute onion in oil til soft. Add zucchini and saute 5 minutes. Add mushrooms and saute 15 minutes, until vegetables are softened. Drain excess liquid.
2. Add remaining ingredients. Pour into greased pan or muffin tins.
3. Bake on 350. Muffins for 30 minutes, bigger pan around 50 minutes.
