Cauliflower Casserole

  • 3 C. cauliflower, chopped
  • 1 Tbs. non/low-fat margarine
  • 3/4 C. onions, chopped
  • 3/4 C. celery, chopped
  • 4 mushrooms, chopped
  • 3/4 C. vegetable stock
  • 1 1/2 tsp. Italian seasoning
  • 3/4 C. breadcrumbs

Directions
Steam cauliflower for 4-5 minutes. Drain and keep warm. Melt margarine in a nonstick skillet over medium heat and sauté onions, celery and mushrooms 4-5 minutes. Add remaining ingredients (except cauliflower and breadcrumbs) and simmer another 2 minutes. Stir in cauliflower. Transfer mixture to a baking dish coated with nonstick cooking spray (nonfat). Top with breadcrumbs and bake at 350 degrees for 15 minutes.
