Quick Black beans and Rice

Ingredients

  • 1 T canola oil
  • 1 onion, chopped
  • 1 (15 ounce) can black beans, undrained
  • 1 (14.5 ounce) can stewed tomatoes
  • 1 t dried oregano and basil
  • 1/2 teaspoon garlic
  • 1 1/2 cups uncooked instant brown rice

Preparation

Step 1

1. In large saucepan, heat oil over medium-high. Add onion and garlic, cook and stir until tender.
2. Add beans, tomatoes, oregano/basil. Bring to a boil; stir in rice. Cover; reduce heat and simmer 5 minutes.
3. Remove from heat; let stand 5 minutes before serving.
