Pulled Pork Sandwiches

  • 5 pounds pork butt
  • 4-6 cups 7 Wives Mesquite BBQ Sauce
  • 6 cups beef broth
  • 10-12 sandwich rolls, cut in half

Preparation

Step 1

Trim a little bit of the fat off the butt. Slice butt in half, then cut each half into thirds for 6 pieces. Place pork in a flat pan and top with 2 cups barbecue sauce. Cover and refrigerate overnight.

Heat oven to 275 degrees. Place the pork in a baking or braising pan, add 2 more cups of the barbecue sauce and 6 cups of the stock to cover the pork in liquid. Tent with aluminum foil and cook for 4-5 hours or until the pieces reach an internal temperature of 165 degrees. Check the pork during the cooking process and add a little water if the liquid is reducing too much. Remove and allow the pork to cool slightly. Use hands or a fork to pull into shreds for sandwich. Divide pork evenly and place on bottom half of sandwich rolls. Top with remaining rolls and serve remaining barbecue sauce with sandwiches.

Makes 10 to 12 servings.
