Salmon Loaf

Ingredients

  • 2 cans red salmon (not pink)
  • 4 eggs, slightly beaten
  • 1 C. fine cracker crumbs (24 saltine crackers)
  • 1/2 tsp. salt
  • 1/8 tsp. black pepper
  • 2 T. lemon juice

Preparation

Step 1

Drain salmon. Combine salmon, eggs, cracker crumbs, seasonings and lemon juice. Pat into a 7 x 7 or 8 x 8 backing dish. Bake 60 minutes at 350°. After 30 minutes put 6 - 8 pats of butter on top and continue baking for the last 30 minutes.
