Bagel Chips with Spinach Artichoke Cream Cheese Dip

Ingredients

  • Dip:
  • 3 tbsp extra-virgin olive oil
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1/2 tsp kosher salt (or 1/4 tsp regular salt)
  • 1/4 tsp coarsely ground black pepper
  • 4 plain bagels, cut into 1/4" wedges
  • 2 tubs plain whipped cream cheese
  • 1 cup chopped fresh spinach
  • 1 14 oz can artichoke hearts, drained and diced
  • 1/4 cup roasted red peppers, diced
  • 1 tsp minced garlic
  • 1 tsp kosher salt
  • 1/2 tsp coarsely ground black pepper
  • 1/4 tsp cayenne pepper

Preparation

Step 1

Preheat oven to 350.

In a bowl, combine olive oil, thyme, oregano, salt and pepper.

Place bagel wedges in a large mixing bowl, drizzle with the oil mixture and toss thoroughly for 60-90 seconds, or until the wedges are evenly coated.

Place the bagel wedges on a cookie sheet in a single layer and bake for 12-15 minutes, or until golden brown.

To prepare the dip, place all ingredients in a mixing bowl and stir with a rubber spatula until thoroughly blended.
