Fresh Tomato Pasta

Ingredients

  • 1/2 onion minced
  • 2 cloves garlic, minced
  • 1/2 cup extra virgin olive oil
  • 3 tbs chopped flat leaf parsley
  • 1/8 tsp crushed red pepper
  • 3 ripe tomatoes, cored and finely diced
  • 12 oz dry pasta, cooked, drained and very hot
  • 1/4 cup grated parmesan

Preparation

Step 1

1. In a large bowl, toss the onion with garlic, olive oil, parsley, crushed red pepper, salt and pepper to taste and tomatoes. Add pasta and parmesan cheese
