Ingredients
- 8-10 medium tomatillos, parchment-like coating removed, rinsed
- 2 tbsp vegetable oil
- 1 onion, minced
- 2 garlic cloves, minced
- 3 jalapeno peppers or to taste, seeded and chopped
- 1 tbsp ground cumin
- 2 tsp mild chili powder
- 1 cup tomato sauce or puree
- 1 cup watermelon chunks
- salt and pepper to taste
Preparation
Step 1
Cut tomatillos into quarters.
Heat oil in a large heavy saute pan over medium-high heat. Add onion and saute for a few minutes. Add tomatillos, garlic and jalapenos. Saute until the onions and garlic begin to brown.
Reduce the heat to low and sprinkle cumin and chili powder over the pan. Stir in tomato sauce and bring to a simmer. Remove from the heat and let cool.
Place the mixture in a blender or food processor. Add watermelon and puree. Season to taste with salt and pepper.
