Ingredients
- 2 pounds large shrimp peeled and deveined
- 1 green, red or yellow pepper cleaned, seeded, and cut into 1 1/2" squares
- 2 zucchini squash cut 1 1/2" pieces
- 2 onions cut into chunks
- 1 can pineapple chunks
- 3 tablespoons vegetable or olive oil
- 3 tablespoons soy sauce
- 1 tablespoon honey
- 1/2 teaspoon ginger
Preparation
Step 1
Alternate shrimp, onion, pepper, squash and pineapple on skewers. Mix pineapple juice, oil, soy sauce, honey and ginger together and brush onto kebabs. Grill over a moderate heat for approximately 10 minutes. Rotate kebabs once and use any remaining sauce to baste kebabs.
Serve with lemon wedges and wild rice.
This recipe yields 6 to 8 kebabs.
