Peach glazed chicken with peach bulgur

Ingredients

  • 1 1/3 c water
  • 3/4 c uncooked bulger
  • 2 t canola oil divided
  • 2 1/2 t white wine vinegar divided
  • 2 tsp chopped thyme
  • 1 tsp grated ginger
  • 2 c chopped peaches
  • 1/4 c thinly sliced scallions
  • 1/2 tsp salt divided
  • 1/2 tsp pepper divided
  • 1 oz crumbled goat cheese
  • 4 boneless skinless breast
  • 1/2 c chicken stock
  • 1/4 c peach preserves
  • 2 tsp whole grain mustard

Preparation

Step 1

1)combine water and bulgur in saucepan and bring to boil.. cover; reduce heat and simmer 12 minutes. drain. rinse with cold water and drain again. combine 1t oil, 1 1/2 t vinegar, thyme and ginger in large bowl. add bulgur, peaches, scallions. 1/4 tsp salt, 1/4 tsp pepper. sprinkle with goat cheese.

2) heat large skillet over md high heat. add remaining oil to pan. sprinkle chicken with remaining salt and pepper. cook 5 minutes per side or til done. remove from pan and keep warm

3) add stock to pan and cook 2 minutes scraping brown bits. stir in remaining vinegar, preserves and mustard. cook another minute. spoon glaze over chicken.
