Tortellini & Spinach Soup

Ingredients

  • 2 C. water
  • 4 T. ham base
  • 28 oz. vegetable broth
  • 1-16 oz. pkg cheese tortellini
  • 2-15 oz. cans of cannellini beans, rinsed and drained
  • 1-14 oz. can of diced italian tomatoes, undrained
  • 1-2 cups shredded rotisserie chicken
  • 1/4 tsp salt
  • 1/8 tsp pepper
  • 4 C fresh baby spinach, chopped
  • 3 T. minced fresh basil
  • 1/4 C. shredded asiago cheese

Preparation

Step 1

In a large saucepan, bring broth, ham base and water to a boil. Add tortellini. Reduce heat and simmer, uncovered for 5 minutes. Add beans, tomatoes, chicken, salt and pepper.

Cook until tortellini are tender. Stir in spinach and basil and cook until wilted. Top servings with cheese.
