Zucchini Nut Bread

Ingredients

  • 3 eggs, well beaten
  • 1 cup salad oil
  • 2 cups sugar
  • 2 cups zucchini, grated or shredded
  • 2 tsp vanilla
  • 3 cups flour
  • 1 tsp bakng soda
  • 1/2 tsp baking powder
  • 1 tsp salt
  • 1 tsp cinnamon
  • 1/2 cup walnuts (chopped)

Preparation

Step 1

in a 2 quart mixing bowl, beat the eggs well. Add oil, sugar, zucchini, vanilla and mix well. In a separate bowl, mix flour, baking soda, baking powder, salt and cinnamon. Add this to the batter slowly and mix really well until well blended. Stir in the chopped nuts. Pour the batter into 2 greased and floured loaf pans or one bundt pan and bake at 325 degrees for about 1 1/2 hours.
