Ingredients
- 1/4 cup butter, softened
- 1/2 cup vegetable oil
- 1 3/4 cups sugar
- 2 eggs
- 2 cups grated zucchini
- 1/2 cup buttermilk
- 1 tsp vanilla
- 2 cups flour
- 2 tbsp cocoa
- 1/2 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp cinnamon
- 1/2 cup chocolate chips
Preparation
Step 1
Pre heat oven to 325F. In seperate bowl mix flour, cocoa, baking powder, baking soda, and cinnamon. Put aside. In mixer or large bowl cream together butter, oil, and sugar until creamy. Add eggs one at a time, blend well after each addition. Add buttermilk and vanilla. mix. In 3 portions add dry ingredients to wet ingredients blending well after each addition. Mix in grated zucchini. Line 12 muffin tins or grease 9x13 pan. Bake muffins for 25-30 min until toothpick comes out clean or centers bounce back. Bake 9x13 pan for 45 minutes until toothpick comes out clean. Take muffins out of pan and cool on wire rack immediately. For 9x13 pan cool on wire rack in pan.
