Mango-Black Bean-Green Onion Salsa

Ingredients

  • 2 mangoes, peeled and coarsely chopped
  • 1 cup cooked black beans, or canned beans, rinsed and drained
  • 2 green onions, finely sliced
  • 1 tablespoon serrano pepper, seeded and finely diced
  • 1/4 cup fresh lime juice
  • 2 tablespoons olive oil
  • 2 tablespoons honey
  • 1/4 cup chopped cilantro
  • Salt and freshly ground pepper, to taste

Preparation

Step 1

Combine all ingredients in medium bowl and season with salt and pepper. Let sit for 30 minutes before serving.
