Ingredients
- 1 16 1 16 1 16 oz pkg baby carrots
- 1/3 1/3 1/3 apricot preserves
- 1 1 1 T butter
- 1 1 1 t grated orange rind
- 2 2 2 T orange juice
- 1/4 1/4 1/4 t salt
- 1/4 1/4 1/4 t nutmeg
Preparation
Step 1
Steam carrots until tender. While carrots cook, combine preserves and butter in small saucepan. Cook over medium heat until preserves and butter melt. Stir in orange rind and next 3 ingredients. Reduce heat and simmer 5 minutes. Add carrots, toss gently to coat. 5 servings ½ c 112 calories
