Shrimp Burgers

Very tasty shrimp burgers with a little spice. You could experiment with different toppings for your burger. Only 5 Weight Watcher points.

Ingredients

  • 1 lb shrimp, peeled and deveined
  • 2 garlic cloves
  • 1/8 cup parsley
  • 1 tsp salt
  • 1 tsp paprika
  • 1 tsp onion powder
  • pinch cayenne pepper
  • 1/2 c Panko breadcrumbs
  • 1 egg, slightly beaten
  • 1 T olive oil

Preparation

Step 1

Take half the shrimp and coarsely chop it. Add it to the bowl. Take the other half and add it to the food processor with the garlic and parsley. Pulse to create a chunky paste. Mix this in with the chopped shrimp. Add the salt, paprika, onion powder, cayenne pepper, breadcrumbs and egg. Mix until just combined. Divide into 4 patties. Heat a skillet over medium-high heat with the olive oil. Add the burgers and cook 3-4 minutes per side on each side until browned and crispy. Serve on a bun or plain.
